Apple Walnut Pancakes (with Fruit Syrup)

These are a real treat, and what better topping for apple pancakes than apple fruit syrup?

Apple Walnut Pancakes with Fruit Syrup

Apple-Walnut Pancakes
1 cup whole wheat flour
1 cup white flour
1 tsp. salt
2 tsp. baking powder
1 Tbsp. brown sugar

2 cups milk
2 eggs well beaten
2 Tbsp oil

1 cup diced apples
1/2 cup chopped walnuts

Combine dry ingredients in a large bowl.
Mix milk, eggs and oil in a separate bowl.
Add liquids to dry ingredients and mix just until completely moistened.
Fold in chopped apples and walnuts.
Bake on a moderate, lightly greased griddle.

Fruit Syrup
1 Tbsp. cornstarch
1 cup apple juice
1 tsp. sugar

Dissolve the cornstarch in a bit of the apple juice in a small pan.
Add the rest of the apple juice and the sugar.
Bring to a boil, stirring constantly until thickened.
Serve hot over pancakes.
