Soybean Granola

Yield: 2 quarts
Time needed: 30 minutes or less.

This is an easy recipe to prepare. Despite the relatively low oven heat, it takes only 15 minutes in the oven. But like most granolas, it still bears close watching. Stir about every 5 minutes to avoid uneven browning.

You might like to try cooking and roasting your own soybeans. It is not hard to do, but it is time-consuming. I used a soybean snack purchased at the Indian supermarket.

Sunny Almond Spread

Yield: 3 cups
Time needed : soak overnight, then buzz in food processor.

Prior preparation needed
Soak almonds and sunnflower seeds 6-12 hours.

Simple and really delicious. Try on a warmed tortilla wrapped around a spinach and tomato filling.

Morning Mush

Yield: 4 cups mix
Time needed: just the time it takes to combine everything in a blender.

The mix is as simple as measuring the ingredients and storing it.  The morning preparation of a single serving calls for grinding the mix and adding the rest of the ingredients.  Quick, wholesome and nutritious.  My kind of breakfast.
