Fruit Smoothie

I love smoothies.  This can be made with whatever fruit is in season and in June that means strawberries.

Fruit Smoothie

Fruit Smoothie
2 cups/500 mL fruit (berries, melon, peaches, etc.)

1½ cups/375 ml plain yogurt
1 cup/250 ml milk
2-4 Tbsp. honey or sugar to taste

Purée the fruit in the blender
Add the other ingredients and blend till smooth.

Celestial Chicken Salad

Time needed: assembly takes only a few minutes, but the chicken salad is chilled overnight and the completed salad for another 1-4 hours. So it is a definite plan-ahead meal.

Prior preparation needed:
Cook chicken & chill

This dish truly lives up to its name.  It is delicious and beautiful, a fit centre piece for a summer buffet luncheon.

Basic Wholegrain Pancakes

Time needed: 10-15 minutes prep.  Cooking time varies with space available to cook pancakes

This is a very basic recipe which can be altered to provide many different flavours. Below are two versions.  The first, topped with apple slices, jaggary and ground cinnamon is the plain basic recipe.  The other with pineapple tidbits and maple syrup is the buttermilk version.

Elisha’s Apple Cinnamon Muffins

These are one of the staff-created variations on the basic muffin recipe used by Alternative Grounds, a popular fair-trade coffee roasters in Toronto. Sadly they no longer operate the restaurant where these muffins were served each morning, but the coffee is still available at various local outlets.

This is a very good muffin, moist and tasty. Good call, Elisha!

Sweet Yogurt Curry

An interestingly different way to make a curry sauce based on yogurt, and, of course, a panorama of Indian spices.  Definitely worth a try.  I used it on green beans and macaroni.
