Shows how far behind I am in getting some of these posted. Here I am sweating in July while posting a recipe I tried in Christmas holidays.

In the appropriate season it is a very enjoyable, comforting soup. A perfect winter lunch. And a great way to use scraps of leftover turkey after Christmas. So tuck it away to use then.

Exotic Barley Stew

Cook beans if using dried beans.
Cook barley

Exotic indeed!  This is a colorful tomato, bean & barley stew subtly flavored with mint, dill and miso.  Exceptionally good!

Barley and Yogurt Soup

Cook barley (40 minutes)

With the barley already cooked, this is a quick soup to make. I find it rather bland though and would add an enlivening spice such as cayenne or curry powder.

Vegetable Barley

Cook barley & soy grits (30-40 minutes)

This is a lovely and very simple stir-fry using barley instead of the more typical rice as the  grain accompaniment.
