Perri’s Best Bran Muffins

Source: Diet for a Small Planet
Date tried: January 23, 2018
Yield: about 20 muffins
Time needed: 30 minutes

This recipe makes me wonder why I have seldom eaten bran muffins. They are delicious! Maybe because of the buttermilk. Nor do they have the heavy quality I have previously associated with bran muffins; they are delightfully light. My only problem is I can’t stop eating them.

Quick Mix – Muffins

Source: Diet for a Small Planet
Date: December 27, 2017
Yield: approximately 2 quarts mix, 1 dozen muffins
Time needed: 25 minutes

Several of my cookbooks have a recipe for a baking mix which can used to make pancakes, waffles, muffins, biscuits, etc. in a jiffy.  Quick Mix is one of these.  Of course, a well-prepared cook would have made the mix a week or more ago and just need to reach into the fridge for it.  Bulk food sections often have similar commercial mixes. But if you would like to make your own, here is the recipe. The soy flour, instant dry milk and wheat germ make this a protein-packed mix.

I found the plain basic muffins rather tasteless and regretted that I had not tried one of the optional additions.

Crunchy Nut Muffins

Date tried: July 2, 2012
Yield: 16 muffins
Time needed:  20-25 minutes

I seldom bake desserts.  So to get muffin recipes in, I decided to bake them for breakfast.  I wasn’t too sure of that at first.  Usually I just put together some yogurt and fresh fruit.  Baking in the early morning was a new adventure for me.

Interestingly, I am finding it fun.  Muffins are quite simple to make and take only 15-20 minutes in the oven, so I can be eating warm muffins just half an hour after pulling the ingredients out of my cupboard.

There’s a little extra preparation with these: roasting the chopped peanuts and seeds.  But that only adds about 3 minutes to preparation.  I used coconut oil both in the muffins and to grease the pans.

Elisha’s Apple Cinnamon Muffins

Source: The Parkdale Potluck Cookbook
Date tried: August 9/16
Yield: 2 dozen
Time needed: 45 minutes

These are one of the staff-created variations on the basic muffin recipe used by Alternative Grounds, a popular fair-trade coffee roasters in Toronto. Sadly they no longer operate the restaurant where these muffins were served each morning, but the coffee is still available at various local outlets.

This is a very good muffin, moist and tasty. Good call, Elisha!
