A beautiful taste combination of apples, bacon and chicken!
Chicken Normandy
2 lbs. chicken pieces
2 Tbs. flour
2 slices nitrate-free bacon
1 onion, chopped
2 stalks celery, sliced
2 apples, chopped
2 cups unsweetened apple juice
Rinse chicken and pat dry. Dust with some of the flour.
Brown chicken with bacon and oil in skillet. Remove chicken.
Add onions, celery and apple to drippings in skillet.
Sauté until tender.
Sprinkle in remaining flour. Mix well and cook another 5 minutes, stirring frequently.
Add the apple juice. Bring to a boil.
Add chicken. Simmer, covered, 45 minutes.
Removde chicken to platter and spoon sauce over top.
Variation: Stir 2 Tbsp. cream into sauce.
