Coating Mix for Oven-Fried Chicken

Making your own coating mix for oven-fried chicken or fish is a simple money-saver that allows for variations of your own invention as well as control of content.

Oven-Fried Chicken in Coating Mix

Coating Mix for Oven-Fried Chicken
2 cups dried bread crumbs
1 1/2 tsp. salt
1 1/2 tsp. paprika
1 tsp. celery salt
1 tsp. onion salt
1/4 tsp. pepper
1 tsp. poultry seasoning (optional)
1/4 cup vegetable oil.

Combine all ingredients in a bowl. Mix well with fork or pastry blender.
Keeps unrefrigerated in a tightly-covered container

To use:
Preheat oven to 350oF.

Put 1/2 cup coating mix in a plastic or paper bag.
Moisten pieces of chicken with water or milk.
Shake one piece at a time in bag.
Add more mix as needed.

Lay chicken skin-side up in a greased pan.
Bake 1 hour or until tender.
No need to turn.

Variation: use with fish fillets. Bake 30 minutes.
