This is a hearty stick=to=the ribs meal for satisfying a large appetite.

Cheese & Potato Puff Pie

Cheese and Potato Puff Pie
1 lb. cottage cheese
1 small onion, chopped
1 small clove of garlic minced
2 cups mashed potatoes
2 eggs, beaten
Dash of cayenne pepper and black pepper
1/2 tsp. salt
1/2 tsp. basil
1 10” unbaked pie shell
1/2 cup grated cheese
1 Tbsp chopped fresh parsley

Preheat oven to 350oF.

Combine cottage cheese, onion, garlic, potatoes, eggs and seasonings in a bowl. Mix well.
Spoon into pie shell.
Sprinkle with grated cheese and parsley.
Bake for 1 hour or until top is brown and firm.
Let stand10 minutes before serving.
