A classic spring soup, great with new potatoes and peas fresh from the garden.
New Potatoes and Peas with Ham
6-12 small, whole new potatoes
3-4 green onions, chopped
2 cups fresh peas
2 Tbsp. margarine
2 Tbsp. flour
1 1/2 cups cooking liquid and milk combined
salt and pepper to taste
1-2 cups cooked ham
1/2 cup grated cheese
Cook the potatoes in boiling salted water until partially tender.
Add the green onions and peas and continue cooking until the vegetables are tender.
Drain reserving the liquid.
Make a white sauce by melting the margarine in a saucepan, adding flour and cooking till bubbly. Add mix of reserved cooking water and milk and cook, stirring constantly until thickened. Continue to cook over very low heat for about 10 minutes, stirring occasionally, until starch is thoroughly cooked. Season to taste.
Pour the sauce over the vegetables, add cooked ham and grated cheese. Heat through gently and serve.
