This is a terrific dish. I love it. Family loved it. Win-win all round.
Baked Squash and Apples
2 lbs/1 kg butternut or buttercup squash, peeled, seeded, fibers removed, cut into 1/2”/1 cm slices
2-3 baking apples (cored and cut into 1/2”/1 cm slices
1/3 cup/75 ml brown sugar
2 Tbsp. butter, melted
1 Tbsp flour
1 tsp salt
1/4 tsp ground mace (optional)
Preheat oven to 350oF/180oC.
Arrange squash slices in an ungreased oblong baking dish.
Arrange apple slices on top of squash
Combine remaining ingredients in a small bowl and sprinkle on top of apples and squash.
Cover and bake until squash is tender (40-50 minutes).
Use red-skinned apples, peels on, for an attractive, colourful dish.
To make it easer to slice squash, pierce with a sharp knife a few times and microwave on high for 1 minute.
