Wilted Spinach Salad

Very quick to make and to be served immediately. I discovered this is a love it or hate it salad. The ingredient making a difference is the sesame oil. I love it, my daughter hates it. The other intriguing frill is that the dressing is heated, and poured on hot, slightly wilting the spinach—hence the name. Anyway, it gets a two-thumbs up from me for taste as well as ease of preparation.

Wilted Spinach Salad
4 cups fresh spinach, rinsed well and patted dry
4 thin slices red onion, separated into rings
1 Tbsp sesame seeds, toasted until light brown and fragrant

3 Tbsp. sesame oil
1 Tbsp. balsamic vinegar
1/4 tsp. salt
1/2 tsp. Dijon mustard

Place spinach in a salad bowl and top with sliced red onion and toasted sesame seeds.
Cpmbine dressing ingredients in a small saucepan and bring to a boil.
Pour hot dressing over salad and toss quickly. Serve immediately.
