Mild Vegetable and Meat Combo

I think I spent twice as much time chopping and slicing the vegetables as I did on cooking this dish. The actual time at the stove is about 20 minutes and you need to have all your ingredients on hand for quick work. For me, it was also an unusual process. But the finished dish is well worth the making of it.

Mild Vegetable Meat Combo

Mild Vegetable and Beef Combo
1 cup vegetable oil
3 large carrots, washed and sliced
3 medium potatoes, peeled and quartered
1/2 lb. lean beef, washed and patted dry and cut into 1” x 3” slices

1/4 cup olive oil
4 Tbsp. garlic and ginger mix
2 large red onions, sliced
3 medium tomatoes, chopped,
1 small cabbage cut into 2” pieces
1 Tbsp. turmeric
sea salt to taste

In a large frying pan (or deep-fryer) heat vegetable oil until bubbling.
Add carrots and deep fry for 2 minutes. Drain and set aside.
Deep fry potatoes for 3 minutes, Drain and set aside.
Deep fry beef for 2 minutes. Drain and set aside.

In a large pan, heat the olive oil with 2 Tbsp. of the garlic-ginger mix. Cook over medium heat for 1 minute.
Add sliced onion and continue cooking for 1 minute.
Add chopped tomateo and stir, taking care not to burn the oil.
Add cabbage and mix well for 10 minutes.
Add carrots, potatoes and beef.
Stir well to combine 3-5 minutes.
Add turmeric and rest of garlic-ginger mix.
Keep stirring to prevent dish from burning.
Once all ingredients are incorporated it is ready to serve.
