Perri’s Best Bran Muffins

This recipe makes me wonder why I have seldom eaten bran muffins. They are delicious! Maybe because of the buttermilk. Nor do they have the heavy quality I have previously associated with bran muffins; they are delightfully light. My only problem is I can’t stop eating them.

Perri’s Best Bran Muffins

Perri’s Best Bran Muffins
2 cups buttermilk
1 egg
2 Tbsp, oil
1/2 cup honey

2 cups whole wheat flour
1 1/2 cups wheat bran
1 cup chopped nuts
1 tsp. baking soda
1 tsp. baking powder

Pre-heat oven to 350oF. Oil muffin tins.

Combine buttermilk, egg, oil and honey.
In a separate bowl, combine flour, bran, nuts, baking soda and baking powder.
Add liquid ingredients to dry ingredients and stir just until combined.
Pour into oiled muffin tins.
Bake 15-17 minutes.

Variations: Replace chopped nuts with one of the following options:
1 cup raisins
1/2 cup peanut butter
1 mashed banana
1/2 cup dates
