An easy recipe, but rather boring. Would do better with some herbal enhancement and perhaps a touch of soy or Worcestershire sauce.
Millie’s Soupy Potatoes
1 large white onion, cut in half and sliced
2 Tbsp olive oil
4 large potatoes, peeled and chunked
salt and freshly ground pepper to taste
1-2 tsp. paprika (to taste)
water or vegetable stock
In a large skillet, sauté onion in olive oil until soft.
Add potato chunks, salt and pepper and plenty of paprika.
Add just enough water to cover potatoes.
Cover with a lid and simmer, stirring occasionally, about 30 minutes or until potatoes are very tender.
