Sunny Salad

A really good vegetable salad suitable as either side dish or main dish.

Sunny Salad

Sunny Salad
3 Tbsp. freshly-squeezed lemon juice
3 Tbsp. olive oil
1 Tbsp. water
1/2 tsp. fine sea salt
1/8 tsp. freshly-ground black pepper

1/4 cup tamari-toasted sunflower seeds (Recipe below)
1 avocado, peeled, stone removed, cut into 1/2” cubes
1 medium tomato, cut into 1/2” cubes
1 medium red bell pepper, finely chopped
1 cup thinly-sliced mushrooms
1/4 small red onion, finely chopped
1/2 cup fresh basil, finely chopped
green lettuce leaves for serving

Combine lemon juice, olive oil, water, salt and pepper in a small jar with a tight-fitting lid.
Cover and shake until ingredients are well mixed.

In a large bowl toss together the sunflower seeds, avocado, tomato, pepper, mushrooms, onion and basil.
Shake dressing once again and pour over the vegetables. Toss until well-coated.

To serve. arrange lettuce leaves on each plate and spoon salad over.

Tamari Toasted Seeds
1/4 cup sesame or sunflower seeds
1 tsp. tamari soy sauce

In a large dry skillet, toast the seeds three to five minutes.
Remove from heat and immediately stir in the tamari sauce.
Transfer to a bowl or plate and cool before serving.
