Spinach is one of my favorite salad greens and now this is one of my favourite spinach salads. Very easy to prepare and the dressing is quite good.
Spinach Walnut Salad
2 Tbsp. freshly squeezed lemon juice
1/3 cup oilive oil
1 small garlic clove, minced
1/2 teaspoon Dijon mustard
1/2 tsp. fine sea salt
1/8 tsp. freshly-ground black pepper
6 green onions with tops, thinly sliced
1 lb. spinach, well washed, stems removed and leaves torn in pieces.
1 cup walnuts, toasted and finely chopped.
Put lemon juice, olive oil, garlic, mustard, salt and pepper in a small jar.
Cover with lid and shake until the ingredients are well mixed.
In a salad bowl, toss together the green onions, spinach and walnuts.
Shake the lemon-garlic dressing and pour it over the salad.
Toss until well coated.
Serve as a side dish with herbed croutons.
Serve in warm pita bread with lentil soup.
