This is a nice option for those who prefer a less sweet muffin. Great breakfast food—or any time of day.
Grandma Pauline’s Cheese Muffins
1 cup flour
1 cup milk
1 cup grated cheese
1 tsp. baking powder
pinch of salt
dash of cayenne pepper or paprika (optional)
Pre-heat oven to 425oF.
Mix ingredients lightly and well. This is a thin mixture.
Use a well-oiled muffin pan and dust with flour. This recipe is not suitable for paper muffin cups.
Pour muffin mix half way up each muffin cup.
Bake for 10 minutes, until firm.
The contributor suggests making a double batch as these freeze well—if you don’t eat them all first!
