Something a little different in banana bread, this is shaped like a cake not a loaf. Still the great banana flavour and moisture one expects.
Quick and Simple Banana Bread
1/4 cup soy milk, rice beverage or almond beverage
6 Tbsp. safflower oil
6 Tbsp. pure maple syrup
2 1/4 cups mashed ripe bananas (about 5 medium bananas)
2 cups whole wheat flour
2 Tbsp. roasted grain beverage powder
1 tsp. baking soda
1 tsp. non-aluminum baking powder
1/2 tsp. fine sea salt
1 cup chopped walnuts
Pre-heat oven to 350oF. Lightly oil an 8” x 8” cake pan and dust with flour, shaking out the excess.
Put soy milk, oil, maple syrup and mashed bananas in a blender and blend until smooth.
In a large bowl combine the flour, beverage powder, baking soda, baking powder and salt.
Add banana mixture and combine using as few strokes as possible so you do not overmix the batter.
Fold in the walnuts.
Scrape into the prepared cake pan and smooth the top.
Bake until a toothpick inserted into the centre comes out clean (about 30-35 minutes).
