Sesame Tomatoes on Rice

A very nice dish for a simple supper.  The sesame breading on the fried tomatoes is wonderful!

Sesame Tomatoes on Rice
¼ cup sesame oil
1½ cups chopped onion
2 cups uncooked brown rice
3½ to 4 cups water
1 tsp. salt
1 tsp. dried oregano
2/3 cup sesame seeds, ground (about 1 cup meal)
1-2 tsp. salt
2 eggs, beaten
12 -15 half-inch thick tomato slices from firm red or green tomatoes
Sprigs of fresh oregano
Sprigs of fresh parsley
Chunks of fresh tomato

Heat sesame oil in pressure cooker or saucepan.
Sauté the chopped onions until golden.
Add rice and continue to sauté until the whole mixture is golden.
Add the water (3½ cups for pressure cooker, 4 for ordinary saucepan), salt and dried oregano.
Stir cover and cook until rice is tender.

Stir ground sesame seed and salt together on a flat plate.
Oil a large frying pan and turn the heat high.
Dip tomato slices into beaten egg, then into sesame meal, coating both sides.
Fry the slices quickly in hot oil to brown the meal and heat them through.  Keep the heat high to avoid turning the tomatoes mushy.
Remove to a plate as soon as they are brown.

Arrange rice on a platter or shallow bowl.
Place fried tomato slices on rice.
Garnish with sprigs of oregano and parsley and with fresh tomato chunks.
Serve hot.
