This dish is really good. Do try it. It won kudos all around the table. While much the same procedure as the better known Huevos Rancheros, it has a distinctively Indian flavour.

Lagan na takari per eda
3 onions, sliced and deep-fried
5 Tbsp/75 ml vegetable oil
1 tsp/6 gm ginger-garlic paste
4 green chilis, deseeded and finely chopped
3 large tomatoes, skinned and deseeded
1/2 cup/12 gm fresh coriander (cilantro), washed and finely chopped
1 Tbsp/15 ml vinegar
1/2 tsp./1 gm red chili powder
1/2 tsp/1 gm garam masala
salt to taste
8 eggs

Deep-fry sliced onions and set aside to drain.

In a large heavy-bottomed pan, heat the 5 Tbsp oil, add ginger-garlic paste and sauté on medium heat for 2 minutes.
Add chilis,tomatoes, green coriander, vinegar, red chili pepper, and garam masala.
Cook until tomatoes turn soft.
Add the salt and fried onions.
Flatten the mixture and make 8 depressions in the mixture. Lower heat.

Break each egg separately into a saucer. Gently slip it into one of the depressions made in the tomato mixture. Repeat until all depressions are filled.
Cook covered until egg whites are done. Do not allow yolks to become hard. Serve immediately.

Tip: gently spooning some of the hot liquid over the egg will encourage white to set without yolk becoming overcooked.
