Cabbage and Potatoes

Cabbage and Potatoes

Cabbage and Potatoes
1/3 cup vegetable oil
1 medium onion, chopped
5 small potatoes, peeled and cut into 8 pieces
2 Tbsp tomato paste or 1 medium tomato chopped into small pieces
1 small cabbage, washed and sliced into 1 inch pieces
2 tsp. garlic and ginger mixture

Heat oil on medium heat in a large saucepan.
Add onions and potatoes. Cook for 5 minutes.
Add tomato (or tomato paste) and cook for 1 minute.
Add sliced cabbage and mix well.
Cover and cook over medium heat for 20-30 minutes.
Add garlic and ginger mixture. Stir well and cook for 1 more minute.
Serve hot or cold.

Variation: add a pinch of turmeric, cumin or black pepper.

    • You can buy it in stores selling South Asian food, also West Indian food, but there is a recipe for it as well. Basically it is 3 parts fresh garlic to one part fresh ginger blended together with a bit of olive oil in a food processor. Keeps in the fridge for quite a while and can also be frozen for long term storage.
