The title might suggest vegan mayonnaise, but because of the cream, it is not. But if you wish to avoid eggs in particular, here is a simple recipe for mayonnaise without them.
1 cup whipping cream
1 tsp. clear honey
1/4 tsp. paprika
1/2 tsp. sea salt
1 cup sunflower oil
2 tsp. lemon juice
Whip the cream until soft.
Fold in the honey, paprika and salt.
With the mixer set on low speed, gradually add the sunflower seed oil.
When the mixture begins to thicken, add the lemon juice.
