Well, it is time to do more work on cleaning up the backlog of recipes readied for posting, but still in the queue. This is a very simple version of Mock Lobster. Much less expensive than the real thing, it is a delicious dish in its own right.
2 cups water
1 tsp. vinegar
1 tsp. seafood seasoning
1 lb. haddock or other white fish cut in large pieces
In a large pot bring water, vinegar and seafood seasoning to a boil.
Add fish, reduce heat,cover and simmer about 10 minutes.
Break into bite-sized pieces.
Serve with melted margarine and lemon juice if desired.
