Cucumber Tomato Relish

Time to make: 15 minutes but allow an hour to chill

I am not sure why this recipe is called a relish.  It’s really a straightforward salad with a choice of oil & vinegar or sour cream dressing.  Contributor says it is delicious with grilled meats.

Cucumber Tomato Relish

Cucumber Tomato Relish
1 cucumber or 2 small zucchini, diced
1 lb./500g tomatoes, peeled and diced
½ cup/125 ml sweet onion, thinly sliced

Oil & Vinegar Dressing
¼ cup/60 ml oil
2 Tbsp. apple cider vinegar or red wine vinegar
2 Tbsp. sugar
½ tsp. salt
¼ tsp. pepper
Choice of seasonings: 1/8 tsp. celery seed, ¼ cup/60 ml fresh parsley, chopped, 1 Tbsp fresh oregano, chopped, 1 Tbsp. fresh basil, chopped, ¼ tsp dry mustard

Combine vegetables in a bowl.
Whisk dressing ingredients together until sugar is dissolved and dressing begins to thicken.
Pour over vegetables.  Salad will keep in refrigerator up to three days.

Sour Cream Dressing
½ cup/125 ml sour cream
2 Tbsp. fresh parsley
2 Tbsp. fresh dill
2 Tbsp. cider vinegar
1 Tbsp. milk
½ tsp. salt
¼ tsp. prepared mustard
¼ tsp. pepper

Mix ingredients and combine with vegetables.  Chill one hour.
