Soak raisins for 2 hours before preparing salad
One of my favorite vegetable salads.
Carrot and Raisin Salad
1/3 cup seedless raisins
1½ cups grated raw carrot
3 Tbsp. light cream
Freshly ground black pepper
Soak the raisins in water for a couple of hours before making the salad.
Mix the grated carrot with the soaked raisins.
Arrange on a bed of lettuce.
Season the cream with the salt and pepper.
Pour the seasoned cream over the grated carrots.
