A quick sauce that turns rice, noodles or toast into a tasty meal in a jiffy.

Mushrooms and Cheese
1 lb. fresh mushrooms
2 Tbsp. wholewheat flour
1/2 tsp. salt
1/4 tsp pepper
1/3 cup chopped onion
1 clove garlic, minced
3 Tbsp. butter
1/4 cup milk
6 Tbsp. shredded cheddar cheese
1 cup plain yogurt

Clean mushrooms. Remove and slice stems, leaving caps whole.
Combine flour, salt and pepper in a small paper bag.
Add mushrooms and shake to coat. Set aside.

Sauté onions and garlic in butter until tender.
Add mushrooms.
Cook over low heat for 10 minutes.
Stir in milk, cheese and yogurt.
Continue to cook over low heat until cheese melts.
Serve over toast, rice or pasta.

Variation: use sour cream in place of yogurt.
