Birz or Honey Water is just what it says: honey mixed into water. I used ordinary water, but I expect it would be very nice with sparkling water. Chilled, it will keep in the fridge for a day or two.
According to the author “Honey water is good in the morning on an empty stomach and before bedtime. It will clean your body and you won’t feel hungry.”
I remember when I was a student teacher, just as we were preparing for our first practice sessions in an actual classroom. Many of us were very nervous and one of our professors advised us to take the precaution of having some honey because “it will give you energy and won’t upset your stomach.”
Birz (Honey Water)
1 honeycomb or pure honey
8 large glasses of spring or sparkling water
Pour water over the honeycomb (use cold sparkling water if you plan to serve it immediately).
Mix well and strain into a serving pitcher. This drink will store for 24-48 hours at room temperature. Chill and serve.
