Fruit Topping or Pudding

Today I gave myself a double-blueberry treat; blueberry fruit topping on Blueberry Cornmeal Pancakes.

Blueberry topping for Blueberry Pancakes

Fruit Topping or Pudding
2½ to 3 cups unsweetened fresh, canned or frozen* fruit
2-3 Tbsp. arrowroot powder
Honey to taste
Cinnamon to taste

Mash or purée fruit in a 1½ quart saucepan.
Stir in arrowroot powder, honey and cinnamon.
Cook 5-7 minutes until mixture thickens, stirring constantly.

*If using frozen fruit, thaw with 2 Tbsp. water in saucepan first. Mix arrowroot powder with ¼ cup water and add with honey and cinnamon and proceed to cook as above.

Serve on pancakes, waffles or toast. Refrigerate leftovers.

For pudding, add 1 cup fruit chunks before cooking.
