Marinated Soybeans

I hadn’t intended to try this tonight. I had planned a sweet & sour stir-fry. But this was on the same page and I was halfway through making it before I realized I was on a different recipe than planned.

This is a lovely little side dish with a tangy sweet and sour flavour and is a good accompaniment to an otherwise bland meal. And it keeps well for a week or more in the fridge.

Marinated Soybeans

Marinated Soybeans

Marinated Soybeans
¼ cup salad oil
1/3 cup cider vinegar
2/3 cup honey
Salt & pepper to taste

2 cups cooked soybeans
¼ tsp. dried basil
½ tsp. garlic salt
½ tsp. oregano
½ cup chopped dill pickles
½ cup chopped celery
½ cup chopped scallions or onions
½ cup chopped parsley
½ cup chopped green pepper
1 clove garlic, minced

Combine oil, vinegar, honey, salt and pepper in a small bowl.
Combine beans, herbs, chopped pickle, minced garlic and chopped vegetables in a large bowl.
Pour dressing over bean mixture. Mix well and chill several hours before serving.
