Yield: 6 servings of 4 4” pancakes
Time needed: About 5 minutes per serving
The cornmeal gives these cakes a delightfully different taste and texture from ordinary pancakes.
1 cup water
½ cup dry milk powder (instant)
1 egg, beaten
1 Tbsp. honey
2 Tbsp. oil
1 cup freshly-ground cornmeal
1/3 cup soy flour
¼ cup whole wheat flour
Dissolve milk in water. Add beaten egg, honey and oil.
In a separate bowl combine cornmeal and flours.
Add to liquid ingredients and stir into a batter.
Adjust amount of flour if necessary to get the proper consistency.
Pour like pancakes onto hot oiled griddle or skillet. Cook a few minutes on each side.
Serve with favorite topping.
