This is a very quick and simple one-pan meal for two. Can be put together in a jiffy with pre-cooked rice. The recipe title says “spinach” but any favorite green will do. The greens in the picture are arugula.
Ten-Minute Greek(ish) Style Spinach and Rice
½ cup onions, chopped (green onions look best)
1 Tbsp. rosemary leaves, fresh or dry
1 Tbsp. oil or butter
1-2 cups raw spinach washed and torn into bite-sized pieces. You can also substitute baby spinach, Swiss chard, dandelion or any similar greens.
¼ cup feta cheese, cubed or crumbled
1 cup cooked rice, preferably long grain.
Sauté the onion and rosemary for a minute or two.
Add the spinach and toss to coat with the oil. Add a little more if necessary. Cook for a minute or two until it wilts.
Stir in the rice and heat through.
Serve topped with feta cheese.
