Prior preparation needed
Hardboil eggs
Cook brown rice

A hearty main-dish salad for hot summer weather.  The recipe was named for the contributor who came from Berlin, Germany.

Angelica’s German Rice Salad
1 small can (6½ oz) tuna, drained
1 medium onion, chopped
3 hard-cooked eggs, chopped
1 large pickle, chopped
1 large green bell pepper, chopped
1 to 3 Tbsp. oil
1 to 2 Tbsp. vinegar
2 cups cooked brown rice
3 large tomatoes, chopped

Combine tuna, onions, eggs, pickle and bell pepper in a bowl.
Add one tablespoon oil and one tablespoon vinegar and toss, mixing well.
Stir in rice and tomatoes.  Add more oil and vinegar to taste.
Chill well before serving.
Salad may be garnished with tomato slices, lemon wedges and parsley.
