I love this soup. It is so simple, so quick to make and so delicious. The use of mace as a finishing touch is inspired.
Leek and Cauliflower Soup
2 Tbsp. butter
1 small cauliflower
1/8 tsp. mace
3 cups water
Wash and chop the leeks
Wash the cauliflower and divide into flowerets.
Melt the butter in a large pan and add the leeks.
Cook gently until the leeks are transparent.
Add the cauliflower, mace and water to the pan and bring to a boil.
Reduce heat and simmer about 10 minutes until the cauliflower is tender but not soggy.
Remove from heat and blend in a blender until smooth.
Reheat if needed and season to taste.
