White Sauce Mix

Want a quick sauce without opening a can? Here’s a pre-made mix for white sauce that can be varied in as many ways as a made from scratch sauce can be.

White Sauce Mix
1½ cups nonfat dry milk solids
¾ cup flour
1 tsp. salt
½ cup margarine

Mix the dry ingredients in a bowl.
Cut in margarine until mix resembles small peas.
Store in refrigerator.

To use:
Combine 1/3 cup mix with 1 cup cold water.
Cook and stir over medium heat until smooth and thickened.

To vary:
Sauté chopped onions or celery or mushrooms in a small saucepan until soft.  Add the combined mix & water and continue as above.

Add dry herbs and/or spices to the dry mix before adding water. Some suggestions: curry powder, garlic or onion powder, grated nutmeg, chili powder, dried basil, oregano, chives, thyme, etc.

Add sauces, chopped parsley, shredded cheese or hard-boiled eggs to sauce after it has thickened. Allow cheese to melt and eggs to warm through.

Replace all or part of water with tomato or fruit juice or with chicken broth.
