You may have guessed by now that I love hot oatmeal, as long as it is made with old-fashioned rolled oats. It’s a great way to start the day. You can have it plain or fancy according to taste, mood, and what’s on hand. This vegan version calls for dried apple slices and apple juice as part of the liquid.
Hot Apple Spice Oatmeal
1½ cups unfiltered apple juice
1½ cups water
¼ tsp. fine sea salt (optional)
1 1/3 cups rolled oats
1 cup chopped dried apples
½ cup coarsely chopped raw walnuts (optional)
Ground cinnamon to taste
Maple syrup for serving
Rice, almond or soy milk for serving
Combine apple juice, water and salt and bring to boil in a saucepan.
Add rolled oats and chopped dried apple and return to a boil.
Immediately turn down heat and simmer for 5 minutes.
Remove from heat, cover and let stand another 5 minutes .
Pour into bowls and garnish with walnuts and cinnamon.
Serve with maple syrup and milk beverage.
