Surati Salad

A very attractive side salad combining the refreshing taste of cucumber with the sweetness of coconut and the crunchiness of roasted beans, peanuts, and sesame seed.

Surati Salad
1 cup/250 gm small cucumber, diced
1 tsp/5 ml vegetable oil
Pinch asafoetida
1 Tbsp/25 gm Bengal gram*, roasted
1 Tbsp/15 gm peanuts, roasted and chopped
1 Tbsp./4 gm fresh, grated coconut
1 tsp/2 gm sesame seeds, roasted
2 green chilies, finely chopped
½ tsp/1½ gm sugar
Salt to taste

Heat oil in a pan.  Add asafoetida and Bengal gram. Sauté for 2 minutes.
In a large bowl, combine the peanuts, coconut, sesame seeds, green chilies, sugar and salt.
Mix in the asafoetida-Bengal gram mix and the diced cucumber.

*Bengal gram can be found already roasted in some Indian grocery stores where it is sold as a snack.  If you can’t find it you could substitute roasted soybeans which are readily available in the snack food section of many natural food stores and some supermarkets.
