Prepare as a quick and simple lunch, or use the sauce alone over rice or pasta. This is absolutely scrumptious!
Mushrooms in Parmesan Sauce for Toast
1 cup stock or wine
¼ cup chili sauce or ketchup
¼ tsp. grated fresh ginger root (or substitute 1/8 tsp. ground ginger powder)
¼ cup minced onion
Butter or sesame oil
2 cups sliced mushrooms
¾ cup parmesan cheese, (freshly-grated if possible)
4 slices whole grain toast
In a small saucepan heat together the stock or wine, the chili sauce or ketchup, the ginger and the onions for about 5 minutes.
In a small frypan, sauté the mushrooms in melted butter or sesame oil for about 5 minutes.
Stir sauce into mushrooms and heat another 2 minutes to blend flavours.
Remove from heat and stir in grated cheese.
Spoon over toast and serve at once.
