This lives up to its name. A nice granola and easy to make. I like the generous amount of coconut in this one. The only drawback with granola is that it needs frequent attention to prevent burning. So choose a time to make it where you will not be interrupted by other chores.
Easy Crunchy Granola
7 cups rolled oats
1 cup rolled wheat
1 cup wheat germ 1
¼ cups ground sesame seeds
¼ cup non-instant dry milk powder
2 Tbsp. brewer’s yeast
½ to 2 cups shredded coconut to taste
½ cup vegetable oil
½ to 1 cup honey to taste
1 Tbsp. vanilla
Optional additions: sunflower seeds, chopped or ground nuts.
Preheat oven to 400oF.
Combine oats and wheat in a large pan and toast in oven until nicely browned, shaking every few minutes to redistribute and get even toasting.
Add wheat germ, sesame seeds, milk powder, yeast and coconut and any additional options.
Toast another 5 minutes stirring frequently.
Combine oil, honey and vanilla and stir into toasted mix.
Toast another 5 minutes.
Remove from oven. Let cool.
Store in a loosely-covered jar.
