Next to my usual fruit with yogurt, I like a cooked cereal for breakfast—also with fruit. Mixing grains provides interesting tastes and textures. This is a wheat, oats, cornmeal mix to which I added apples as well as dates.
Hearty Three-Grain Cereal
4 cups water
¼ tsp. fine sea salt (optional)
½ cup chopped, pitted dates
½ cup cracked wheat
½ cup steel-cut oats
1/3 cup yellow stone-ground cornmeal
3 Tbsp. sesame seeds
Ground cinnamon to taste
Pure maple syrup for serving
Rice, almond or soy milk for serving
Mix wheat, oats and cornmeal together in a small bowl.
Bring the water and salt to a boil.
Add dates and mixed cereals, stirring briskly to prevent lumps.
Reduce heat to simmer and cover.
Let cook until thickend, about 5 minutes, stirring frequently to prevent sticking.
Remove from heat and let stand another 5 minutes.
Serve in individual bowls with a sprinkling of sesame seeds and cinnamon.
Add maple syrup and choice of milk beverage to taste.
